Healthy Recipes By Hala Barghout

Vita Coco’s nutritionist Hala Barghout has created some delicious and healthy recipes with Vita Coco Coconut Oil to help keep your energy levels up throughout hot Summer days!

Here’s two of Hala’s tasty and energy boosting recipes:

Superfood Bites

  • 1 tbsp Vita Coco Coconut Oil
  • 2 tbsp  chia seeds
  • 1/2 cup of oats
  • 1 tbsp coco powder
  • 2 tbsp maple syrup
  • 1/3 cupdesiccated coconut
  • 1/2 cup walnuts
  • 1 tbsp peanut butter

Start by placing the oats, walnuts, and chia seeds in your food processor.

Blend for 1 minute until the flour forms and the nuts have crumbled.

Add the remaining ingredients and blend for another minute until a sticky dough forms.

Then use your hands to roll the mixture into 15-20 little balls, place in a bowl and store in the fridge.

Zucchini Almond Cake

  • 1 tbsp Vita Coco Coconut Oil, melted
  • 1 1/2 cups almond flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 cup grated zucchini, water squeezed out
  • 3 eggs
  • 3 tbsp maple syrup
  • 1 banana, mashed

Preheat oven to 350 degrees and grease two mini bread loaf pans.

Combine the dry ingredients in a small bowl and set aside.

Combine the wet ingredients (besides the zucchini) in a mixer and beat on medium for about 2 minutes.

Add the zucchini and mix until combined.

Pour the dry ingredients into the wet, mix well and pour into loaf pans.

Bake for 30-35 minutes until a toothpick comes out clean!
